Need inspiration for healthy and nutritious dishes? Looking to incorporate more plant-based meals into your diet?

These are some of my favourite recipes from very talented plant-based cookbook authors. They have combined simple ingredients and nutrient-dense foods in creative ways to make nutritious dishes that I include in our family's regular menu plan.

Feel free to check them out...and enjoy!

Chopping Vegetables
Oatmeal-PB-Chocolate-Chip-Cookies.jpg

These cookies are oil- and gluten-free and can easily be adapted to be nut-free as well, simply by substituting your favourite seed butter instead. They are guilt-free, healthy treats and sooo yummy!

I love Dreena Burton's recipes and have several of her cookbooks.

You can find this recipe here.

Butternut Squash Casserole.jpg

This casserole is a wonderful make-ahead dish that is loaded with nutrients and oh-so-tasty. You can make it nut-free by replacing the almonds with pumpkin seeds. You can also add sweet potato to roast with the butternut squash for added sweetness and vitamins.

This is Angela Liddon's recipe from "Oh She Glows"...another one of my favourites. You can find this recipe here.

Lentil Meatballs.jpg

These soy-free meatballs are delicious over your favourite pasta... whether traditional or zoodles (pasta made from zucchini). They can be made ahead and warmed in marinara sauce when you're ready to enjoy them.

This is Colleen Patrick-Goudreau's recipe and our family has been enjoying her recipes for years. You can find this recipe here.

The-Best-Vegan-Chili-Ever.jpg

This vegan chili is bursting with flavour and has a nice chewy texture because of the baked tofu crumbles. For added nutrients, you can also add your favourite veggies to this beautiful base recipe, like mushrooms, peppers, zucchini, sweet potatoes...it tastes even better the next day!

This is Sam Turnbull's original recipe from "Fuss-Free Vegan", a welcome new addition to my favourite cookbooks collection. You can find this recipe here.
